Discover Antonio Palacios' Mixology at Our Cabo Resorts
Chart a course for unique and exciting new flavors when you and a group of friends search out Antonio Palacios' mixed drinks. Serving as the head sommelier and bartender for the Pueblo Bonito resorts in Cabo San Lucas, Antonio Palacios has been tasked with creating all new signature cocktails for the bars and restaurants at the resorts. He is also in charge of training the hotels’ bartenders so that all can recreate the fabulous recipes to perfection, allowing guests to revisit these amazing concoctions across any Cabo resort. Guests are encouraged to taste and compare them all!
Antonio’s mixology focuses on the four categories of Agave-based spirits: tequila, mezcal, bacanora, and sotol. His recipes use natural infusions, created in-house with local ingredients such as rosemary, thyme, ginger, and lemon; all which maintain the ideal balance of flavor and alcohol content. The drinks are gently shaken or stirred, not tossed into a blender, and the results are pure cocktail perfection that will make you say, “Wow!” Just as Antonio intended.
