Salud! Here’s a Trio of Pueblo Bonito’s Best Margaritas

Cinco de Mayo may be the classic moment for a margarita—but at Pueblo Bonito Resorts, it’s always in season. Across three standout properties in San Miguel de Allende, Los Cabos, and Mazatlán, mixologists are serving creative takes on the iconic cocktail, crafted to match the setting: rooftop sunsets, surf-side afternoons, and garden-view evenings.

A classic margarita starts with tequila, orange liqueur, and fresh lime—then the fun begins. Here are three Pueblo Bonito favorites, from an inspired original to an elevated classic. From floral and aromatic to rich and citrusy, each margarita is designed to taste like its destination.
Lavanda Vantage Margarita – Pueblo Bonito Vantage San Miguel de Allende

An aromatic and sophisticated margarita that combines floral and herbal notes with the character of tequila. Ideal for surprising guests with something different and visually striking.

Ingredients:

  • 30 ml (1 oz) lavender infusion
  • 60 ml (2 oz) reposado tequila (such as Tequila Herradura)
  • 30 ml (1 oz) Controy (orange liqueur) infused with thyme
  • Ice (preferably one large cube)

For garnish and rim:

  • Lavender flower (for garnish)
  • Crushed dried bougainvillea
  • Crushed dried morita chili
  • Crushed dried lavender
  • Salt

Preparation:
Prepare the rim:

  • Mix some salt with crushed bougainvillea, morita chili, and lavender.
  • Moisten only half of the rim of the glass with lime and dip it into the mixture.

Prepare the infusions:

  • Lavender: Add lavender flowers to hot water, let steep for a few minutes, and cool. (45 g dried lavender per 8 oz water)
  • Controy with thyme: Let a few sprigs of thyme steep in the liqueur for at least 1–2 hours to infuse aroma. (30 ml Controy per 1 sprig of thyme)

Prepare the cocktail:

  • Add all ingredients directly into your preferred glass.
  • Place a large ice cube in the glass. This type of ice melts more slowly and keeps the drink cold.
  • Gently mix with a spoon to integrate the flavors.
  • Garnish with a lavender flower on the cocktail or on the rim for an elegant finish.
  • Pro Tips:
  • Use culinary-grade lavender to avoid bitter flavors.
  • If you prefer a more citrusy touch, add a few drops of lime juice.

Quintessence Hibiscus Margarita - Quivira Steakhouse, Los Cabos
A fresh, floral cocktail with a Mexican twist thanks to hibiscus and tequila—elegant yet very easy to prepare.

Ingredients:

  • 45 ml (1.5 oz) hibiscus-infused blanco tequila
  • 30 ml (1 oz) St-Germain
  • 15 ml (0.5 oz) fresh lime juice
  • 7 ml (¼ oz) agave honey
  • 15 ml (0.5 oz) hibiscus concentrate
  • Ice

For garnish:

  • Hibiscus salt (mix salt with dried, ground hibiscus)

Preparation:
For the rim:

  • Moisten the rim of a martini glass with a little lime and dip it into the hibiscus salt for a unique visual and flavor touch.

To prepare the cocktail:

  • Add all ingredients to a shaker (or a jar with a lid if you don’t have one).
  • Add ice halfway, seal well, and shake vigorously for 10–15 seconds to chill and combine flavors.
  • Strain the mixture into the prepared glass.

Pro Tips:

  • If you don’t have infused tequila, steep clean hibiscus in tequila for 30 minutes (100 ml tequila per 5 g hibiscus).
  • Adjust sweetness by adding more agave honey if you prefer it less tart.

Cadillac Margarita - Pueblo Bonito Emerald Bay, Mazatlán
A richer, more refined version of the classic margarita, ideal for celebrations and special occasions.

Ingredients:

  • 45 ml (1.5 oz) añejo tequila (such as Tequila 1800)
  • 30 ml (1 oz) Grand Marnier
  • 30 ml (1 oz) fresh lime juice
  • A splash of orange juice
  • Ice

For garnish:

  • Salt for the rim
  • Lime or orange slice, to taste

Preparation:
For the rim:

To prepare the cocktail:

  • Add all ingredients to a shaker (or a jar with a lid).
  • Add ice halfway, seal, and shake vigorously for 10–15 seconds.
  • Place ice in the glass and pour in the strained mixture.
  • Garnish with a slice of lime or orange to taste.

Frozen version:

  • Add all ingredients to a blender.
  • Add one cup of ice.
  • Blend until a frappé-like consistency is achieved.
  • Serve in your preferred glass and garnish.
