The kitchen holds up its end of the evening beautifully. You and your guest choose from six four-course menus, each one composed with as much intention as the setting around you.

For the couple who believes more is more, Option One delivers: a classic Caprese Salad and velvety Lobster Bisque lead to the evening's crown jewel, Surf and Turf with Beef Filet and Lobster Tail, finished with White Chocolate Mousse and mixed berries. Option Two leans refined and poetic, with Smoked Salmon and Mixed Greens, Fish and Clam Soup, Beef Medallions in Merlot wine sauce, and Pinot Gris and Saffron Poached Pears resting on Vanilla Panna Cotta.

Option Three is made for those who want the Pacific on the plate as much as the view. Start with Smoked Salmon Mousse with Dill Crostini and Caviar Vinaigrette, move through a Riesling-Infused Sweet Potato Cream Soup and Shrimp Crown with Wild Rice, and finish with a tropical Coconut and Pineapple Mousse that feels perfectly suited to its surroundings. Option Four brings Shrimp and Crab Croquettes, a silky Asparagus Cream Soup, Salmon Fillet with Crispy Potatoes, and an Almond Florentine with Fruit Mousse, elegant without trying too hard.

For something with a true sense of place, Option Five is the one: a Zinfandel-Poached Pear Salad, Sun-Dried Tomato and Watercress Soup, Chicken Breast Stuffed with Dried Fruits and Tarragon Sauce, and a Black Cherry and Ricotta Strudel finished with Damiana Liqueur, a nod to the spirit of Mazatlán, quite literally. And Option Six rounds out the collection beautifully, from a Tuscan Salad with Balsamic Vinaigrette to a dramatic Sea Bass Fillet Wrapped in Banana Leaf with Ancho Chile and Cheese Sauce, and a Chocolate and Strawberry Cake to close the night the right way.
