Mexico has a number of fun activities and cultural events year round. With fiestas and holidays that range across many regions, Mexico celebrate a variety of exciting cultural events. Some of these events include Mazatlan's Carnaval, Dia de Los Muertos, the recent Bicentennial amongst many others. This month's main celebration is a favorite, particularly amongst American tourists, named Cinco de Mayo! This holiday celebrates when only 4,000 Mexican soldiers battled the well armed French forces of 8,000 solders at Puebla, Mexico (just 100 miles east of Mexico City) on the morning of May 5, 1862. It lead to one of the most surprising victories in history and represented a significant morale boost to the Mexican army and the Mexican people at large.
It is now celebrated across the Central and North America and enjoyed across many cultures. Los Cabos and Mazatlan will be hosting celebrations in the city. However, if you cannot make it to Mexico, here are some wonderful ideas to spice up your own special fiesta:
Make some margaritas:
1 1/2 oz1 fine Tequila
1/2 oz premium triple sec (preferably Cointreau)
1 oz lime juice
Directions: Rum the rim of a cocktail glass with lime juice, and dip in salt. Shake all ingredients with ice, strain into the glass, and serve.
Create festive Crispy Chicken Tacos with Salsa (serves 3-4):
4 chicken breasts, 8 4-inch tortillas (corn, whole wheat, flour), 3 cups panko bread crumbs, 1/4 cup whole wheat flour, zest of 3 limes, 1 teaspoon ground coriander
marinade:1/3 cup olive oil, 1/3 cup tequila, 1/4 cup lime juice, zest of 2 limes, 1 teaspoon ground coriander
toppings: shredded lettuce, freshly grated monterey jack cheese, cilantro, lime wedges, and your favorite Salsa
Directions: 2-24 hours before making the tacos, combine the marinade ingredients in a baking dish. Tenderize chicken, season it with salt and pepper, and then slice it into strips lengthwise. Add the chicken to the dish and let marinate in the fridge until ready to make.
Preheat oven to 450 degrees F. Combine panko, flour, lime zest and coriander in a bowl. Lay a wire rack on a baking sheet and spray with non-stick spray. Remove chicken from marinade and coat strips in panko mixture, pressing so crumbs adhere. Let them on the baking sheet then give them a quick spray of non-stick spray or olive oil. Bake for 10 minutes, flip, then bake 10 more.
