And as summer reaches its peak here, leading us to search for the perfect poolside drink, we figured we’d talk with the man who makes it all happen at Pueblo Bonito Pacifica.

What’s Your Favorite Summer Drink?
Right now, it’s the Watermelon-Rita—an interesting take on a classic cocktail we all know and love. This version comes with a few twists that make it perfect for summer.
How Do You Make It?
The first thing you’ll notice is the “glass”—the drink is actually served in the watermelon itself. Start by cutting a thin slice off the bottom of the melon so it will sit upright, then a larger slice off the top to create an opening. Extract the pulp by making small spheres using a spoon and moisten the rim of the melon with some of pulp.
Pour Tajín on a plate and dip the upside watermelon to rim the edge, as you would with salt for a traditional margarita. Then, refrigerate the watermelon until the cocktail is ready.
For the drink portion, add three spheres of the watermelon, 1½ ounces of grapefruit juice, 1 ½ ounces of lime juice, and ½ ounce of agave honey to the shaker, then muddle for several seconds. Next, add some ice and pour in one and a half ounces of white tequila (blanco) and one ounce of orange liqueur. Shake vigorously to incorporate it all.
Fill the watermelon with ice and pour the cocktail with a strainer. Garnish with slices of lime and orange, plus a few leaves of mint, and enjoy!
